Honey Glazed Nectarine + Roasted Pecans Oatmeal

Necatrine + Roasted Pecans Oatmeal


1 maple brown sugar oatmeal packet (you can use any oatmeal you want flavored or unflavored)



1 whole nectarine

(optional) Toasted coconut chips

Water or almond milk/milk of your choice

Vegan butter 

A large microwavable bowl

(optional) Himalayan salt


Wash and cut your nectarine


Place your cut nectarines on a parchment paper lined baking sheet (in the photo you can see I used foiled, but parchment paper will work better. So choose which works best for you!)

Place your desired amount of pecans on the lined baking sheet as well

Using a spoon, drizzle honey onto each nectarine piece. You don’t need a lot of honey, a little goes a long way!

Place the baking sheet into your oven for 5-7 minutes. Do not leave it in the oven for more than 10 minutes!!

While your nectarine and pecans are cooking, pour your oatmeal packets into your microwavable bowl.

Using the instructions on the packet add the necessary amount of water or milk to your oatmeal to ensure they cook thoroughly.

Microwave your oats until they are cooked to your liking. It took mine about 2 minutes to cook to my liking. You can also cook your oatmeal on the stove, just follow the instructions for that!

By the time your oatmeal finishes cooking your nectarine and pecans should be done cooking.

Safely remove the baking sheet from the oven and let them cool. 

If you use flavored oats for your oatmeal like I did, I would not recommend season your grits again. The only thing I added to mine was a spoonful of butter.  However, if you used plain oats I would use some brown sugar, butter, and cinnamon to season your oatmeal.

Once your oatmeal is seasoned to your liking, sprinkle your desired amount of coconut chips. Also dd your nectarine and pecans to your oatmeal.

(Optional) Lightly drizzle with honey and sprinkle a pinch of salt onto your oatmeal to add a sweet and salty flavor to your oatmeal.
