Soooooo….one thing that I truly love about the quarantine is that it has taught me how to be more innovative and thoughtful when it comes to my meals. Admittedly, this can also be somewhat annoying because due to the fact most of my meals are prepared within my home, I have to put thought into ALL my meals. Extra brain power aside, this is a good thing. It has made me pay more attention to what I have, don’t have, what I actually eat and use and what I do not use, etc. I’ve saved money and made some bomb meals by simply paying more attention to what it takes to make meals I love. This particular meal is the DELICIOUS product of my need to go to the grocery store.
Here we have a Cava Inspired Green + Grains Bowl
Ingredients:
Half a bag of Mediterranean Salad Mix
1 cup of Tasty Bite brown rice
1 can of Albacore Tuna
1 mini cucumber
Grape tomatoes
Hot peppers (optional)
Bell peppers
Red Onion
Lemon Juice
Vidalia Onion Dressing
Cilantro
Pita Crisps (mine came with the salad kit. If you don’t have pita crisps you can use nuts or wonton strips if you have them…that’s if you need a crunchy element)
Prep:
Vegetables:
Thoroughly wash and cut your desired amount of bell peppers, onion, grape tomatoes, cucumber, and cilantro. TIP: Roll your cilantro into a cylinder shape and use clean kitchen scissors to cut your cilantro…or rip it like I did (lol)

Tuna:
Drain your tuna
Put the tuna into a bowl large enough for you to mix it up
Add your desired seasonings. I used black pepper, Himalayan salt, garlic powder, onion powder, old bay, crushed red pepper, paprika, and lemon juice
Mix up your tuna, breaking down any large chunks
Rice:
Heat your rice in the microwave for 90 seconds following the instructions on the packet
Assembling your bowl:
Using a bowl large enough for you to mix up your bowl
Pour your salad into your bowl, evenly spread it to cover the bottom of the bowl
Place your rice on top of the salad
Place your washed and prepped vegetables on top of the rice
Add your tuna on top of your vegetables
Add your cilantro
Add your pita crisps or crunchy element
Drizzle on your desired amount of dressing
